hey

So i know that i have not posted in a long time, but i have a sick note from my doctor. I was very ill last week and at one point i felt like i could not walk because my knees ached so much. I feel better now and i am sipping down the cough medicine with codeine, that stuff is sweet.

Mick and I are having a relaxing night watching the boys on idol and Simon just called the dude Chikezie jacuzzi that was funny.

Mario Bros

okay, so I have always love Nintendo systems. Noelle Huey told me that you can download the original games with the Wii, and I have a very handsome husband with a credit card.



So first I played this:




It was a lot of fun, I even remembered all tricks and secret places to jump to the next levels, I did not dominate the land but will soon.


Then I played this:




I forgot that when you have full life that your sword will shoot. You go to a new screen and just stand there and shoot your powerful sword to kill all those things whose names I do not know.

Know why Colin likes computer games so much? He would sit in the playpen and watch me play Zelda and be in a trance while watching all the action. I guess I ruined him.

Between loads laundry I had a very fun couple of hours.

Chicken and Cheese Enchiladas

This is one of my favorites !


Chicken and Cheese Enchiladas

About 1 pound of cooked chicken shredded

1 medium onion diced

1 jar picante sauce

Shredded cheddar cheese (I usually use 1 8 oz block and shred that)

3 oz cream cheese

Cumin

Salt & pepper

1 package of soft tortillas

Take a sauce pan and put about 1 tablespoon of butter and cook the onion until soft, once that is done put in the shredded chicken, cream cheese, ¼ cup of the picante, 1cup of the cheddar cheese, salt & pepper, and about a tablespoon of the ground cumin and mix them all together. I usually put the lid on the sauce pan and let the cheeses melt and get it all real creamy.

take about 1/3 cup of the mixture, put that in the lower portion of the tortilla and roll that up, I place it seam side down in a 13 x 9 pan that I have sprayed with PAM.

Once all the tortillas are lined up in the pan, I pour the remaining picante sauce over the tortillas and make sure it is all spread out and sprinkle the cheese over that.

Cover the casserole dish with aluminum foil and bake for about 15 minutes in a preheated 350 degree oven.

Well I have threatened to start a blog for a while and this might be it.

I will probably post some recipes, talk about my quilting life, my life with mr podboy, the most wonderful husband in the world, and maybe even post some pictures.
